Safe food handling is especially important when catering for older people and others who may be more vulnerable to the consequences of foodborne illness.

Chefs should understand areas including personal hygiene, contamination prevention, safe preparation, storage, temperature control and cleaning procedures.

Knowledge of the International Dysphagia Diet Standardisation Initiative (IDDSI) framework can therefore be particularly relevant for chefs working in care-home kitchens.
